Bottle Conditioned Beer
Bottle conditioned beer is a traditional brewing method where secondary fermentation occurs inside the sealed bottle, naturally producing carbonation through the addition of a small amount of sugar and live yeast before bottling. This process not only creates soft, natural bubbles but also allows the beer to age and develop deeper, more complex flavours over time, similar to wine. The presence of sediment or yeast at the bottom is normal and adds to the beer's character, especially in styles like White Beer. To enjoy bottle conditioned beer at its best, store it upright in a cool, dark place at around 12°C (53.6°F), avoiding refrigeration and excessive jostling, as the active yeast can be disturbed or killed, impacting the beer’s quality. This traditional craft method, embraced by us here at the Left Brewery, Brecon, highlighting our patience, skill, and a dedication to producing richly flavoured, naturally carbonated beers that evolve beautifully with age.
